Executive Chef Stewart Gray brings 10 years of experience to the Ace Eat Serve team, after serving as a chef at a variety of Denver’s staple restaurants, including Simms Steakhouse, Watercourse Foods, the Cherry Cricket, and Ale House Amatto’s.

Stewart was attracted to Secret Sauce (the restaurant group behind Ace and Steuben’s) in 2021 by the ‘Chef Lead’ menus at both Ace and Steuben’s, along with the company’s vibrant community and commitment to hospitality-driven guest experience. Since then, after three years as Sous Chef and Chef de Cuisine at Ace, he has taken on the role of Executive Chef. He has an organized and solution-focused leadership style. He believes in clearly setting expectations and that assisting others in rising to the occasion is the recipe for success. 

When Stewart is not folding Xiao Long Bao, he spends his time reading, playing with his band, and hanging out with his Chihuahua Rocket.
