Daybreak Hospitality’s Executive Chef Patrick Jackson has always had a love for food. From childhood days spent making pasta with his grandfather to perfecting the art of pizza at Lucky Penny, Patrick’s journey has been fueled by his Italian roots and experiences in kitchens across the country.

Since Patrick was fifteen, he’s held almost every position possible in a restaurant. After completing the culinary program at Santa Barbara City College, Patrick helped open Acme Hospitality’s The Lark in Santa Barbara and managed their sister restaurant, Lucky Penny. He then moved to San Diego to open Brian Malarkey’s Herb & Wood. 

After honing his skills in California, Patrick teamed up with Ryan Harms to bring something new to the Austin, Texas food scene. Together, they took a food truck and transformed it into the city’s favorite brunch spot, Paperboy.

Patrick relocated to Denver to lead the team’s first location outside of Texas, which opened in West Highland in March 2026. Colorado had long felt like a second home, thanks to years spent snowboarding in Breckenridge and enjoying the outdoor recreation, and now he’s putting down roots as a Denver local. He’s excited to be an active member of the city’s food and beverage community, collaborating with local chefs, supporting neighborhood events, and giving back to the purveyors that make Denver so special.
